I love mayonnaise but when I look at the ingredients list on the label it’s frightening! What are all those odd words? So I decided to start making my own. It’s simple to make but I will admit it’s time consuming.
1 fresh egg, 1 tablespoon Dijon, 1 tablespoon white vinegar, 1/4 teaspoon sea salt, 1 cup oil
Place egg in bowl. Whisk until frothy. Add Dijon, vinegar and salt. Whisk until incorporated. Add a few drops of oil at a time and whisk for 10-15 minutes. Repeat until egg mixture begins to thicken. At this point you may stream larger amounts of oil in at a time and continue whisking. Repeat until mayonnaise is of desired consistency. Store in refrigerator in air tight container.
